Candied Jalapenos: Hot, Sweet Delights

You Can’t Live By Sugar Alone…..  nope you need a little heat, too.  That is what Candied Jalapenos will do…..heat up your life.   I found these on Tasty Kitchen where they are called Cowboy Candy.   Everything about these is intense.    After you get over the hot/sweet first bite, they can be addicting, so beware.   You can eat them alone but I like them with cheese & crackers or chopped up in other dishes.  And, you can use the syrup to brush on meats or flavor other dishes like shrimp salad or even cocktails.    Just remember, they are HOT !!

Candied Jalapenos

  • 3 pounds Firm, Fresh Jalapeno Peppers, Washed
  • 2 cups Cider Vinegar
  • 6 cups White Granulated Sugar
  • ½ teaspoons Turmeric
  • ½ teaspoons Celery Seed
  • 3 teaspoons Granulated Garlic
  • 1 teaspoon Ground Cayenne Pepper

If you are sensitive to peppers, wear gloves.

Slice both ends from the jalapenos, then slice the peppers into uniform 1/8 – 1/4 inch rounds.   In a large non-reactive pot, bring all other ingredients to a boil.  Reduce heat and simmer for 5 minutes.  Add the pepper slices and simmer for 4 minutes.  With a slotted spoon, transfer the peppers into clean jar, leaving 1/4 in space.   Bring the remaining liquid to a rolling boil for 6 minutes, reducing to a syrup.   Pour boiling syrup over the jalapeno slices.   Let cool slightly before adding lids.   Store in the freezer or fridge.
